Strictly speaking, it's paleolithic, but that doesn't take anything away from the fact that Sauvage is among Berlin's - and Europe's - most original restaurants.
Paleo, as the cuisine is known, is a concept based on the nutritional habits of our ancestors. It's all about organic, unprocessed foods, including meat, vegetables, fish, eggs, oils, nuts, seeds and herbs. Strictly out are all those new-fangled starches, grains, sugar and dairy produce.
The general idea is that by eating a paleolithic diet - prepared using modern techniques - we can become healthier in body and mind, increasing everything from concentration to sex drive. And it tastes pretty good too.
