British cuisine hasn’t exactly got a stellar reputation across the world, but with restaurants like St John popping up and wowing crowds and critics alike with its fresh takes on traditional recipes, it looks like the stereotype of unwelcoming British food is nearly gone for good. The specialty of St. John’s kitchen, led by chef Fergus Henderson, is “nose to tail” eating. The entire animal is celebrated – offal and all. Since its opening in 1994, St. John’s reputation has put it on the map as one of the best restaurants in the world, and there have been several expansions across London, as well. You can now find St. John-associated restaurants (and even a hotel!) in Chinatown and across Spitalfields Market.
