There's a touch of debate in Poland, from both sides, about whether it's possible to be both Jewish and Polish at once, while favouring neither over the other. At Cymes, that debate seems to have been laid to rest - at least in the menu. For it is here that the influences of both worlds come together very much for the greater good. The ethos of Cymes seems to be the creation of something new from individual sources, and this is something that they do incredibly well. It's the place to go too if you are looking for an introduction to Israeli wines, or simply to learn about new customs, cultures and creative cuisine.
